Soup is so damn easy. Get some meat and some onion, fry it up, stick it in a big pan with loads of water and stock (I think it's called buillion in the US?) add some frozen peas, some pasta, some butterbeans or whatever, and voila, soup. It's pretty cool if you can throw in frozen spinach too, then you grate a bit of cheese over the top when it's in that bowl. You can make gallons of the stuff if you're really extra hungry 
There's also simple and good stuff like chili, pretty much that's just fried mince with onion, kidney beans, any other veggies you want, a can of tomatoes and some chili powder.
Notably chili is also really good if you replace the beef mince with chunks of chicken and replace the kidney beans with chickpeas. You can throw in some sour cream afterwards, and that makes it aces with nachos and a little cheese. Hell, stick it in a tortilla, and you have a burrito-type affair.

Oh yeah. Buy mixes. I stock up on stroganoff mixes when I'm alone (as it makes for great stroganoff, and no need for flour. Basically:
- Slice 1 pound of beef into thin strips
- put on saucepan until brown
- plop 1 cup of water (or more, depending on how sticky you want your sauce)
- plop on your desired amount of sliced mushrooms
- plop sour cream
- simmer for 10 minutes, salt.
Interwabs has also great resources. Or books. I buy the Jamie Oliver ones because no matter how much of a wanker he is, his recipes are easy as shit to make.
