I actually have seen very few Animes, so my short list of favorites pretty much covers all that I've seen.

let's see:

Akira- ranks as number one because of it's insane level of animation. almost every single frame is redrawn, even for somthing as simple as someone talking. No cut out mouths here!

Ghost in the shell- because of it's creativity and design, not to mention it's great use of perspective!

DBZ- just for it's basic story idea and character design. animation sucks IMHO.

I've only glimpsed some others and can't really make judgements of them.

Eto Rangers - Because it's what started my drawing/furry career
Slayers - The prime example of how to execute an RPG-ish plot as a cartoon.
Love Hina - Slapstick teen humor... until they hit the dramatic subplot.
Kareshi Kanojo no Jigyo - The intellectual twin of Love Hina; Evangelion in real life.

Well, you guys probably wouldn't know what Eto Rangers is, though. =)

Anime! Well, it wasn't until recently that I've been getting into Anime, but I have a select few titles that I really like lots.

Ushio & Tora: The story about a boy and his demon... ummm... yeah.

Wild Knights Gulkeeva: Very very few people outside of Japan have heard of this series. For that matter, it's not even available in English (and it looks like it won't be for QUITE a while, sad to say). An e-mail friend of mine in England(!) told me about this series and showed me some stills and fan art. I managed to get the VCDs of the series and I was hooked!

Slayers, the first series: I find Dilgear very hot, but that's just me.

Moldiver: not furry, but a fun series! What happens when your kid sister messes about with a device that can turn you into a superhero? Captain Tokyo... in a FROCK??

Digimon: I like it, I watch it when I can, but I'm not a line-quoting, cross-referencing fan of the show.

Those are all the ones I can immediately think of.

Peace;
PunkTiger!
(...a line-quoting, cross-referencing fan of Danger Mouse. )
