Liea was a Princess of Alderaan and in the Senate. Bet she had some handmaids (pre-Rebel officer days). A Republic does not mean a elegatarian society. Historically, it was possible to have a "healthy" master/servant relationship. Or haven't you ever heard of the "loyal family retainer"? (The Chairswan isn't one of them, of course. I suspect the only reason she has servants at all is because she forces them to be there.)
