I should mention that Sarien and FreeSCI only work on the Sierra games with a text parser. You can see the compatibility list on their websites.

For the newer Sierra adventure games with the point-and-grope interface, there's always DOSBOX.

The LucasArts adventure games are also playable with ScummVM, on practically any computer. Hell, there's even a Dreamcast port. I recommend the old Sierra adventure games, too.
